Veggie Burgers
Ingredients:
1 can (15 oz) black beans, drained and rinsed
1/2 cup cooked quinoa
1/2 cup bread crumbs
1/4 cup chopped onion
1/4 cup chopped bell pepper
1 garlic clove, minced
2 tbsp chopped fresh parsley
2 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 egg, beaten
1/4 cup all-purpose flour
2 tbsp olive oil
Optional toppings: lettuce, tomato, avocado, cheese, ketchup, mustard
Instructions:
In a large mixing bowl, mash the black beans with a fork or potato masher.
Add the cooked quinoa, bread crumbs, onion, bell pepper, garlic, parsley, cumin, smoked paprika, salt, black pepper, and beaten egg to the bowl.
Mix all of the ingredients together until well combined.
Form the mixture into 6-8 patties, depending on the desired size.
Dredge each patty in the flour until lightly coated.
In a large skillet, heat the olive oil over medium heat.
