Vegetarian Lasagna
Ingredients:
12 lasagna noodles
2 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
2 bell peppers, chopped
2 zucchinis, chopped
1 can diced tomatoes
1 can tomato sauce
2 tbsp tomato paste
2 tbsp dried basil
2 tsp dried oregano
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1 container (15 oz) ricotta cheese
1 egg
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Optional toppings: chopped fresh basil, chopped fresh parsley
Instructions:
Preheat the oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions until al dente.
In a large skillet, heat the olive oil over medium heat.
Add the onion and garlic, and sauté for 2-3 minutes until the onion is translucent.
Add the bell peppers and zucchinis, and sauté for 5-6 minutes until the vegetables are tender.
Add the diced tomatoes, tomato sauce, tomato paste, basil, oregano, sugar, salt, and black pepper, and stir until combined.
In a separate bowl, mix together the ricotta cheese and egg until smooth.
Spread a thin layer of the tomato sauce mixture on the bottom of a 9x13 inch baking dish.
Layer 4 lasagna noodles on top of the sauce, followed by half of the ricotta mixture, and a third of the mozzarella and Parmesan cheeses.
Repeat with another layer of sauce, noodles, ricotta, and cheeses.
Finish with a layer of sauce, noodles, and the remaining cheeses.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 25 minutes, or until the cheese is golden and bubbly.
Remove from the oven and let cool for a few minutes before slicing.
Serve hot, garnished with fresh basil and parsley if desired.
