Spinach and Feta Stuffed Portobello Mushrooms
Ingredients:
4 large portobello mushrooms, stems removed
1 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
1/2 cup chopped spinach
1/2 cup crumbled feta cheese
1/4 cup breadcrumbs
Salt and pepper to taste
Optional toppings: chopped parsley, grated Parmesan cheese
Instructions:
Preheat the oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat.
Add the onion and garlic, and sauté for 2-3 minutes until the onion is translucent.
Add the chopped spinach, and sauté for 2-3 minutes until wilted.
Remove from heat and stir in the crumbled feta cheese and breadcrumbs.
Season with salt and pepper to taste.
Brush the portobello mushrooms with olive oil and place them on a baking sheet.
Divide the spinach and feta mixture among the mushrooms, filling each one to the top.
Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
Remove from the oven and sprinkle with chopped parsley and grated Parmesan cheese, if desired.
