Mushroom Stroganoff
Ingredients:
12 oz egg noodles
2 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
16 oz sliced mushrooms
1/4 cup all-purpose flour
2 cups vegetable broth
2 tbsp soy sauce
1 tsp smoked paprika
1/2 tsp dried thyme
1/4 tsp black pepper
1 cup sour cream
Optional toppings: chopped fresh parsley, grated Parmesan cheese
Instructions:
Cook the egg noodles according to package instructions until al dente.
In a large skillet, heat the olive oil over medium heat.
Add the onion and garlic, and sauté for 2-3 minutes until the onion is translucent.

Simmer for 5-10 minutes until the sauce has thickened.
Remove from heat and stir in the sour cream.
Serve the mushroom stroganoff over the cooked egg noodles.
