Vegan Pad Thai
Ingredients:
8 oz rice noodles
1 tbsp olive oil
1/2 cup chopped shallots
2 garlic cloves, minced
1 cup sliced mushrooms
1 cup sliced bell peppers
1 cup bean sprouts
1/2 cup chopped scallions
1/4 cup chopped cilantro
1/4 cup chopped peanuts
Lime wedges for serving
For the sauce:
1/4 cup soy sauce
2 tbsp brown sugar
2 tbsp tamarind paste
1 tbsp rice vinegar
1 tbsp sriracha
1/4 cup water
Instructions:
Cook the rice noodles according to the package instructions, then rinse under cold water and set aside.
In a large pan or wok, heat the olive oil over medium-high heat.
Add the shallots and garlic, and stir-fry for 2-3 minutes until fragrant.
Add the mushrooms and bell peppers, and stir-fry for 3-4 minutes until tender.
Add the bean sprouts and scallions, and stir-fry for 1-2 minutes until the bean sprouts are slightly wilted.
In a small bowl, whisk together the soy sauce, brown sugar, tamarind paste, rice vinegar, sriracha, and water to make the sauce.
Add the cooked noodles and sauce to the pan or wok, and stir-fry for 1-2 minutes until everything is heated through and coated in the sauce.
Remove from heat and stir in the chopped cilantro and peanuts.
Serve hot with lime wedges for squeezing over the top.
