Vegan Chickpea Curry
Ingredients:
1 tbsp olive oil
1 onion, chopped
3 garlic cloves, minced
2 tbsp curry powder
1 can chickpeas, drained and rinsed
1 can diced tomatoes
1 can coconut milk
1 cup vegetable broth
2 cups spinach leaves
Salt and pepper to taste
Instructions:
Heat the olive oil in a large skillet over medium-high heat.
Add the onion and garlic, and sauté for 2-3 minutes until the onion is translucent.
Add the curry powder and stir for 1 minute.
Add the chickpeas, diced tomatoes, coconut milk, and vegetable broth.
Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.
Add the spinach leaves and cook for 2-3 minutes until wilted.
Season with salt and pepper to taste.
Serve hot with rice or naan bread.
