Vegan Black Bean Burgers
Ingredients:
2 cans black beans, drained and rinsed
1/2 cup oats
1/2 cup chopped onion
1/2 cup chopped bell pepper
2 garlic cloves, minced
2 tbsp tomato paste
1 tbsp soy sauce
1 tsp cumin
Salt and pepper to taste
Burger buns and toppings of your choice (lettuce, tomato, avocado, etc.)
Instructions:
Preheat the oven to 375°F (190°C).
In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
Add the oats, onion, bell pepper, garlic, tomato paste, soy sauce, cumin, salt, and pepper, and mix until well combined.
Form the mixture into 4-6 patties, depending on how large you want them.
Place the patties on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, or until the patties are firm and lightly browned on the outside.
Serve on burger buns with your favorite toppings.
