Portobello Mushroom Burger
Ingredients:
2 large portobello mushroom caps
1/2 avocado, mashed
1/4 cup sliced red onion
1/4 cup sliced tomato
1/4 cup arugula
2 tbsp olive oil
1 tbsp balsamic vinegar
Salt and pepper to taste
Instructions:
Preheat a grill or grill pan over medium-high heat.
Brush the portobello mushroom caps with olive oil and season with salt and pepper.
Grill the mushrooms for 4-5 minutes per side until tender.
In a small bowl, whisk together the olive oil and balsamic vinegar to make a dressing.
Assemble the burger by spreading the mashed avocado on the bottom mushroom cap, then adding the sliced red onion, tomato, and arugula.
Drizzle the dressing on top and place the second mushroom cap on top to complete the burger.
