Creamy Zucchini Soup
Ingredients:
2 large zucchinis, chopped
1/2 cup chopped onion
2 cloves garlic, minced
1/4 cup coconut cream
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
Instructions:
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and garlic and sauté for 2-3 minutes until fragrant.
Add the chopped zucchini and continue to sauté for 5-7 minutes until tender.
Using an immersion blender, puree the mixture until smooth.
Add the coconut cream and lemon juice, and season with salt and pepper to taste.
Serve the soup hot, garnished with a sprinkle of black pepper.
