Creamy Garlic Spaghetti Squash
Ingredients:
1 large spaghetti squash
1/2 cup coconut cream
2 cloves garlic, minced
2 tbsp nutritional yeast
2 tbsp olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (205°C).
Cut the spaghetti squash in half lengthwise and remove the seeds.
Brush the inside of each half with olive oil and season with salt and pepper.
Place the squash halves cut-side down on a baking sheet and bake for 30-40 minutes, or until tender.
In a small saucepan, heat the coconut cream, nutritional yeast and garlic over low heat.
Once the squash is cooked, use a fork to shred the flesh into spaghetti-like strands.
