Ingredients:
1 head of cauliflower, riced
1 avocado, sliced
1/4 cup chopped almonds
1/4 cup chopped cilantro
1/4 cup chopped green onions
2 tbsp coconut oil
2 tbsp lime juice
Salt and pepper to taste
Instructions:
In a large pan, heat the coconut oil over medium heat.
Add the riced cauliflower and cook for 5-7 minutes until slightly browned.
Remove from heat and add the lime juice, salt, and pepper.
Divide the cauliflower rice into two bowls and top with sliced avocado, chopped almonds, cilantro, and green onions.
