Broccoli and Cheese Soup
Ingredients:
2 cups chopped broccoli florets
1/2 cup chopped onion
2 cloves garlic, minced
2 cups vegetable broth
1/2 cup coconut cream
1/2 cup nutritional yeast
2 tbsp olive oil
Salt and pepper to taste
Instructions:
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and garlic and sauté for 2-3 minutes until fragrant.
Add the chopped broccoli and continue to sauté for 5-7 minutes until tender.
Add the vegetable broth and bring the mixture to a boil.
Reduce the heat to low and let simmer for 10-15 minutes.
Using an immersion blender, puree the mixture until smooth.
Add the coconut cream, nutritional yeast, and salt and pepper to taste.
Stir until the cheese is melted and the soup is creamy.
Serve the soup hot, garnished with a sprinkle of black pepper or more nutritional yeast, if desired.
