Shakshuka
Ingredients:
2 tablespoons olive oil
1 large onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon chili flakes (optional)
1 can (28 ounces) crushed tomatoes
Salt and black pepper to taste
4-6 large eggs
Fresh parsley or cilantro for garnish
Instructions:
Heat the olive oil in a large skillet over medium-high heat.
Add the diced onions and red bell pepper and sauté until softened, about 5-7 minutes.
Add the minced garlic, ground cumin, smoked paprika, and chili flakes (if using) to the skillet and sauté for another minute, stirring constantly.
Pour in the can of crushed tomatoes and season with salt and black pepper to taste. Bring the mixture to a simmer and let it cook for about 10-15 minutes until it has thickened slightly.
Use a spoon to create small wells in the tomato mixture and crack an egg into each well.
Cover the skillet with a lid and let it cook on medium-low heat until the egg whites are set but the yolks are still runny, about 5-10 minutes.
Garnish with fresh parsley or cilantro and serve hot with crusty bread for dipping.
