Paella
Ingredients:
1 lb large shrimp, peeled and deveined
1 lb mussels, cleaned and debearded
2 cups Spanish short-grain rice (such as Bomba or Calasparra)
4 cups chicken broth
1 onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 teaspoon smoked paprika
1 teaspoon saffron threads
Salt and black pepper to taste
Olive oil
Lemon wedges for serving
Instructions:
Preheat the oven to 375°F (190°C).
In a large skillet, heat some olive oil over medium-high heat.
Add the diced onion, minced garlic, and diced bell peppers to the skillet and sauté until softened.
Stir in the smoked paprika and saffron threads.
Add the rice to the skillet and stir to coat it with the vegetable mixture.
Pour in the chicken broth and season with salt and black pepper to taste.
Bring the mixture to a simmer and let it cook for about 5-7 minutes.
Arrange the shrimp and mussels on top of the rice mixture.
Cover the skillet with a lid and transfer it to the preheated oven.
Bake the Paella for about 20-25 minutes until the rice is tender and the seafood is cooked through.
Remove from the oven and let it cool for a few minutes before serving.
Serve hot with lemon wedges for squeezing over the top.
