Hummus
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup Tahini paste
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1/2 teaspoon ground cumin
Salt and black pepper to taste
1/4 cup extra-virgin olive oil
2-3 tablespoons water
Paprika and olive oil for garnish
Instructions:
In a food processor, blend the chickpeas, Tahini paste, lemon juice, minced garlic, cumin, salt, and black pepper until smooth.
With the food processor running, slowly pour in the olive oil and blend until incorporated.
Add 2-3 tablespoons of water, one tablespoon at a time, until the desired consistency is reached.
Taste and adjust the seasoning as needed.
Transfer the hummus to a serving bowl and drizzle with some olive oil and a sprinkle of paprika.
Serve with pita bread, vegetables, or crackers.
